15 Cooking Tricks Chefs Reveal Only at Culinary Schools

15 Cooking Tricks Chefs Reveal Only at Culinary Schools

Bright Side found out 15 simple but effective cooking tips every foodie should know. These secrets will help you to make your dishes taste just as great as Gordon Ramsay's (or even better!). How do restaurant chefs manage to cook delicious culinary masterpieces so fast? Professional chefs usually keep all their cooking tricks a secret and share them only with their students. TIMESTAMPS The perfect steak 0:47 The juiciest meat 1:31 Flavoring spices 2:24 Light and airy dough 3:05 Fish with a delicate crust 3:39 Cooking steak without oil 4:13 Creamy mashed potatoes 4:41 Excellent cream soup 5:29 The best pancakes 6:19 Sugar is not for sweetness 6:51 The most difficult one: perfectly fried eggs 7:15 Clear broth 8:10 Crispy bread crust 9:06 Cook onions correctly 9:46 Don't be afraid of garlic 10:32 SUMMARY - Don't fry a piece of meat that you've just taken out of the fridge. Leave it for an hour or 2 before cooking to let it come up to room temperature. Now you'll fry the meat evenly and get a great meal, regardless of how you like your steak done. - It takes time to fry chicken or pork properly, and you can dry them out very easily. To avoid this, many European chefs use a simple trick: they put the meat in a brine. It's very easy to make a good brine: take 3 cups of water, and add ¼ cup of salt and ¼ cup of sugar. Pour the brine into your meat so that the liquid covers it, and put the bowl in a fridge. - To extract natural flavors and enhance the taste of the black pepper or cumin in your dish, toss them in a pan over medium heat, toasting them until they're fragrant. After that, you can use a mortar and pestle to grind your spices. - If you want to make it perfect, here is a simple rule. Take the butter and eggs out of the fridge the night before to let them come up to room temperature. - If you want to fry fish on a grill, spread some mayonnaise on it to get a tasty, delicate crust. Take a pastry brush, dip the tip in the sauce, and lightly apply mayo to the fish. Add some salt, and then grill it. - Alain Ducasse, one of the most famous chefs in the world, revealed his secret for cooking a great steak. The steak is placed on its edge because it renders the fat. Now you're able to cook the steak in beef fat, plus it creates a delicious crust on the edges. - Before turning boiled potatoes into the mashed ones, you need to dry them properly. Just place them in a clean heated frying pan, and keep them there until the remains of water dry out. Don't let the heat fry them. When the potatoes are dry, you'll get the best creamy mashed potatoes. - Right before you start cooking it, fry all the vegetables separately with olive oil. Then add some water or broth. Frying will caramelize the sugar in the vegetables and enhance their flavor. The dish will be exquisite and tasty. - Regardless of the recipe you follow, always add two tablespoons of sour cream to the mix. This trick suits all kinds of pancakes well, and they turn out to be very tasty, fluffy, and free of cracks. - Sugar can be as good a seasoning as salt. Add a bit of sugar to a dish with pickled or fresh tomatoes or a tomato paste. The sugar reduces their natural sourness and makes any meal taste better. - The 3 components of perfectly fried eggs are a thick-walled frying pan, butter, and minimum heat. Heat up the frying pan, and add 1/2 tablespoon of butter. It has to melt slowly, not reach a sizzle. Break the eggs, and cook for 4-5 minutes. Add salt, and enjoy perfectly fried eggs. - A clear broth is the main component in many soups, sauces, and other dishes. To make a crystal clear broth, you need to cook chicken on a low heat without a cover for at least 3 hours. - If you bake at home, you might have faced difficulties with your crust: it's either too pale or too thick. You can solve this problem quite easily by putting a bowl of water into your oven when you bake. Instead of such a bowl, you can use a tray full of ice cubes. -Use a medium heat for frying, and add both cooking oil and butter to the heated frying pan. Cut the onions, and fry them with some salt. - If you still love to eat it but don't want to frighten away your date or wreck the negotiations, don't add garlic to the dish. Instead, you can apply some garlic juice to the plate. Thus you'll avoid the unpleasant smell and enjoy your favorite flavor. Why 350°F is the magic number for baking

Why 350°F is the magic number for baking

Turns out there’s a lot of chemistry in cooking. Subscribe to our channel! http://goo.gl/0bsAjO Ever notice the first step for baking a cookie is almost always to preheat the oven to 350 degrees? Even when you’re baking something else, an oven with a digital temperature reader typically defaults to 350. What’s so magical about this number and why is it that so many recipes call for it? I spoke with longtime pastry chef and Institute of Culinary Education creative director Michael Laiskonis and found that – as with most “magical” things – it’s actually science. Special thanks to Chef Daniel Kleinhandler of Bar Boulud and Boulud Sud and Chef Jenny McCoy for their help with this video! 10 Foods You Should Never Eat

10 Foods You Should Never Eat

We know some products are really dangerous for our health, and other products are good for us as they are healthy. It turns out it’s not so simple and some of the most promoted and popular foods can, in fact, harm you. Never eat these 10 dangerous foods for the sake of your own health and the health of your family. Even if you see the juice labels “not from concentrate” or “100% pure”, don't let this fool you. Juice, after being squeezed from different fruits, is kept in huge vacuum-sealed tanks where it can sit for up to a year before being packaged! And by that time, the juice has lost all its flavor, which is why manufacturers have to add artificial flavoring to make it taste fruity again. In most cases, cereals are loaded with refined carbohydrates and sugar. Even if the label assures you that it's fat-free and whole grain, check the list of ingredients. You'll most likely see that the product is full of sugar. Despite common belief, most yogurts don't contain probiotic bacteria since the process of pasteurization kills all these microorganisms. When consumed, trans-fats in ice-cream can cause high cholesterol, stroke, heart disease, and even cancer. Ice cream is also loaded with sugar, artificial flavors, and synthetic preservatives. And if it’s pink, purple, or red, it’s most likely been colored with cochineal extract or carmine, additives which can cause bad allergic reactions. Popcorn has some genetically modified ingredients as well as taste-boosting chemicals and additives. This leads to health problems such as heart attacks, digestive issues, allergies, skin rashes, breathing problems, and the depressing list goes on. Even more, popcorn is extremely caloric. Music: Vibe Mountain - Great Hope The 126ers - Reversed Eclipse Rondo Brothers - Yellow Gold Kevin MacLeod - Jay Jay Silent Partner - Pink Lemonade https://www.youtube.com/audiolibrary/music TIMESTAMPS Fruit juices 0:37 Energy bars 1:42 Cereal 2:31 Margarine 3:21 Low-fat yogurt 4:11 Ice cream 5:01 Eggs 6:07 Microwave popcorn 7:09 Sugar-free candy 8:32 Diet soda 9:26 SUMMARY -Store-bought juices may contain some real fruit, but most of their content is water, sugar, and artificial flavoring. -Protein bars and energy bars alike are usually processed products containing sugar, artificial flavors and sweeteners. -Breakfast cereals typically contain a teeny tiny amount of whole grains, which allows producers to mark their product as healthy, but they also contain unhealthy sugar. -Margarine is typically made from industrial vegetable oils hydrogenated to become solid, a process that significantly increases the oils’ trans-fat content. -Manufacturers load “low-fat” yogurts with sugar to make up for the lack of taste usually provided by the natural fats. -Instead of pure milk or cream, manufacturers use cheaper hydrogenated fats such as palm- or coconut oil to produce ice-cream. These oils, when heated, become nothing more than trans-fats. -One egg contains as much cholesterol as a big greasy burger. -Microwave popcorn’s almost always lined with the same toxic substance you can find in Teflon pans. -If candy doesn’t contain sugar, it contains artificial sweeteners such as aspartame, sucralose, and saccharine. These substances are chemically processed and may cause some serious side effects. -Artificial sweeteners in diet soda can easily lead to weight gain as they trigger the production of insulin, which makes your body store fat. But many specialists are doubtful that the combination of these products will be able to cure cancer or prevent it completely. - However, studies have shown that lemon juice, for example, is a very effective means of fighting against carcinogenic cells. It reduces oxidative stress in your whole body, therefore, lowering the risk of cancer. - Baking soda, in turn, is known for its ability to regulate pH levels. It means that it can counteract the acidity your body accumulates which is one of the main reasons of cancer. This disease tends to thrive in the acidic environment. Baking soda also detoxifies the body and heals it from the exposure to radiation and oxidative damage. - It can assist you in the process of weight loss. There is enough evidence that the drink provides better endurance and more energy during workouts. - Lemon with baking soda will provide cleansing for your body. Lemon, in particular, is a diuretic. It stimulates your body to urinate - therefore the excess of water, salts, toxins, and fats is expelled. - This combination can also be used for dental care. Be careful - its abrasive qualities may harm the teeth if you try to use this mixture for whitening them. - Lemon combined with baking soda improves digestion. It works as a perfect antacid reducing bloating, heartburn, cramping, and other symptoms of indigestion. - Lemon baking soda drink prevents the negative effect free radicals have on your body. The result? It is very beneficial for your skin as it can slow down the signs of aging, surprise your skin with a healthy glow, and reduce the speed at which wrinkles appear. Ranges: What To Consider When Purchasing

Ranges: What To Consider When Purchasing

There are a few things you should keep in mind when selecting a new range. First, what size range do you really need? It's the width of the range that will determine the size that's best for you. Ranges are available in twenty inches wide, twenty four inches wide, thirty inches wide; which by the way is the most common size; and thirty six inches wide. High end ranges can also be found in forty eight inches and even sixty inches wide. Next is the fuel type. Will you be connecting your range to gas or electric? Most gas ranges today are designed for natural gas. Most of these can also be converted to work with LP gas. Today's ranges are also available in dual fuel. Dual fuel utilizes both gas and electric. The benefit of a dual fuel range is that you have the great control of a gas cooking surface on the top and an electric oven that provides consistent temperature control. Next is the color. Most ranges today are available in white. However, some brands may offer additional colors like black, bisque, grey, and of course the most popular, stainless steel. Ranges are available with several door types. Basic ovens will have a solid door. Usually the same color as the rest of the range. Having a window allows you to check the status of food as it's cooking without having to open the door and letting all the heat out. The larger the window, the easier it is to keep track of how your food is progressing. Let's take a look at different installation types. The most common would be free standing; available in both gas and electric. This range typically sits between two counter surfaces but can also stand on its own as both sides are finished. Free standing ranges also have a back splash where you most often find the range controls and the clock. Next is the slide in range. A slide in range allows you to have a seamless look of your back splash without looking at the back guard of a range. Slide in ranges feature the burner and oven controls up front so you never have to reach over a hot surface to adjust the burner. Keep in mind, the sides are usually unfinished therefore they must be placed between two cabinets. Drop in ranges, like slide in ranges, have a lip that over hangs the counter top. They do however require customized cabinetry as they are dropped into their prepared space with a cabinet toe kick panel at the bottom. This offers a very nice customized look to your kitchen. As the toe kick runs continuously across the farther range and not interrupted by the appliance. These are just the basic areas that must be addressed when selecting your new range. They offer many convenient features that will help you cook like a pro. Shop all ranges here: https://bit.ly/2qCtSXf
